Of the many things that France is know for, it's food is one of the most celebrated. With it's history going back to the Middle Ages, it has many innovations in both taste and technique that have shaped the culinary world.
One of the most synonymous French foods would be it's cheeses. Many different regions in France produce cheese, each with it's own distinct flavor. For instance the areas around paris and to the northwest focus on softer brie and camembert, where as regions to the east make tougher cheeses, like emmental. There are seven distinct varieties which include white mould cheese, washed rind cheese, uncooked semi-hard cheeses, hard cheeses, blue cheeses, goat's milk cheeses, and ewe's milk cheeses. Each type of cheese has it's own flavor, just as the region that produces it does. These unique specialties and locations are protected and verified by the French Appellation d'Origine Controlee system (AOC). This is like a stamp of authenticity.
Besides cheese, France is also famous for it's wine. They have the second largest vineyard area behind Spain. Like cheese, there are many regions that produce specific kinds of wine. Sparkling wines, according to French law, are only called Champagne if they are made from grapes grown in the region of Champagne. For this reason, they also established the Appellation d'Origine Controlee, aiming to protect the french market.
Thirdly, they are famous for their desserts, including the eclair, petit four, crème brulee and the macaron. Their desserts are usually light, rich, with an elegant attention to detail. The word dessert originates from the French word desservir meaning "to clear the table". Famous French pastry chefs would include Florian Bellanger, currently a judge on the Food Network show Cupcake Wars. Chef Jacques Torres, creator of Jacques Torres Chocolate Haven, a factory where chocolate bars are designed before your eyes. And Pierre Hermé, most famous for his macarons and their original flavors. French Vogue named him "The Picasso of Pastry."
