I am getting married in Mexico and need to choose wine for the reception. We can buy a decent selection of wine down there, and I have an opportunity to take some down from here.
Okay, so how to choose the wine? Our reception meal will likely be a choice of fish or chicken. While it won’t be American-style “Mexican food” it will certainly be influenced by Mexican flavors – maybe Snapper Vera Cruz. So, it will be a little spicier and bolder than a typical chicken or fish dish. I won’t know exactly what the meal selection will be until after I can get the wine sent down there.
Please don’t offer the “Red with meat, white with chicken & fish” formula. I know sometimes a Chardonnay can overpower a meal, so I was thinking a Pinot Gris or Sauvignon Blanc, but haven’t hit on a winner. For red, maybe a Pinot Noir or Red Zin?
I have asked at a couple wine stores, but thought I’d see if I could get any good tips here. I’ve looked online, but it’s

Okay, so I've been trying to find this orange juice sauce recipe I used to have (for pasta) years ago, yet no matter where I look I can't find one. This is the closest I've found to it. The recipe looks good, but I know I'm not always going to be able to use the wine. So, I need to know what I should do. Eliminate the wine and nothing else? Add more OJ? Add more of something else??
1/2 Cup finely minced onions or shallots
2 T red jalapeno peppers, minced
1/2 white wine, dry (Chard., Sauvignon Blanc, Pinot Gris, etc.)
1 cup fresh orange juice or 3 T frozen concentrate
1 cup whipping cream or non fat half and half or evaporated skim milk
1/4 cup red or green bell pepper, minced
3 cloves finely sliced garlic
16 ounces cooked and drained linguine or angel hair pasta
Minced fresh Italian Parsley for final garnish
Heat 1 T olive oil over medium heat.
Add onions, bell pepper, garlic and jalapenos. Sauté for about 6 minutes
Add the wine and reduce by half.
Add the orange juice and let simmer for 2 minutes.
Add the cream or non-fat cream and scallops with all of their remaining juices, and let the sauce reduce for about 10 minutes.
Add the pasta and combine with the sauce. Remove from heat.
Garnish with minced fresh Italian parsley
Suggestions? Anyone have a different recipe?

Need good ideas for 3 whites, 3 reds at very reasonable prices. Looking for wines that are good examples of the grapes they come from so I can give beginning tasters a general flavor profile that they can use as a cheat sheet in trying to identify.
Was thinking of a Pinot Noir, Cabernet Sauvignon and a Zinfandel or Sangiovese for the reds. Viognier, Pinot Gris and Chardonnay for whites.
Thoughts, suggestions, etc... very welcome!
