What is Vintage? Why can some wines last 200 years but others have to be opened within 2 years.?

I've just come back from Spain and wanted to buy a wine at Malaga airport that I could keep for 40 years - but the wine I chose needs to be drunk within 3 years (even though it was quite expensive and local). I read about wines from 1780 being sold for $$$$$ but what determines how long they'll last? I'm confused, but am getting the chance to go back to Malaga next month and would like to buy a Rioja I can store till the Apocalypse - or at least till the US invades Iran, whichever happens first.

Spanish Supermarkets Queries?

We arrive in Spain on a saturday night. We are self catering and so will need some supplies but I have a feeling that all supermarkets are closed on a sunday? Is this correct? Therefore, can anyone tell me which supermarkets will still be open after 21.00 on a saturday night where we can buy basic food, wine and household goods like washing up liquid? We are arriving at Malaga airport and staying in Nerja - we will have a car. Thanks!

The main wine-producing areas are La Rioja, the Penedès in Catalonia, Valdepeñas in Castile–La Mancha, the Duero valley in Valladolid, and Málaga and Jerez de la Frontera in Andalusia.Animals are also raised. Pigs are raised mainly in Castile-León, Aragon, and Catalonia, and pork leads meat production in Spain, followed by poultry, beef, and lamb. In the Atlantic coastal regions and the dry southern interior, sheep and dairy cows are raised.
