My husband and I bought 2 bottles of wine on our Honeymoon last year. 1 year ago March 29th. We drank one that night and wanted to save the other one for our 1 year anniversary which is next week. I knew it would last awhile.. but then as I was reading, I'm a little concerned now because I have basically just left it sitting on the counter for the past year, we didn't put it in a wine cooler or keep it below 60 degrees and it's upright, not laying down. We are not experts at storing wine or anything. I was just wondering if it will be okay for us to drink it on our anniversary or is it bad since we didn't keep it cool or lay it down? It is the Cayuga White wine.. I don't know how long it had been stored there when we bought it, but like I said, it will be exactly 1 year since we bought it. Thanks for your help!
Oh, we did know enough to not put it in the fridge or anything... and I'm sorry if this is a silly question. We really don't know much about these things, we don't drink much, just once in awhile.. but I've never had to store a bottle this long.

After racking (cayuga) white wine, it seems too sweet for my liking. Is there a way to make it less sweet? I have made this the last two years and the first was perfect, last years was too sweet for me (others loved it). Thanks in advance.
